There are vegetarian, dairy free and other options below.<\/em><\/p>\n<p>You may have seen\u00a0recipes using cauliflower for pizza bases, or for faux \u201crice\u201d, now here\u2019s a recipe using it for mashed potato, or as some say \u201cfaux-tato\u201d.<\/p>\n<p>This recipe was developed for a person who reacts to nightshades, so has no potato, tomato or peppers (bell peppers, capsicum, chilli peppers, cayenne, paprika).<\/p>\n<p><a href=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/09\/cottage-pie-0.jpg\"><img loading=\"lazy\" class=\"aligncenter size-full wp-image-1888\" src=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/09\/cottage-pie-0.jpg\" alt=\"\" width=\"640\" height=\"480\" srcset=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/09\/cottage-pie-0.jpg 640w, http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/09\/cottage-pie-0-300x225.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><\/a><\/p>\n<h4>Meat layer<\/h4>\n<p>\u2022 400-500gms ground meat of your choice<br \/>\n\u2022 1-2 Tbs pork lard, or other fat of your choice<br \/>\n\u2022 2 onions (I like red)<br \/>\n\u2022 4 large flat mushrooms<br \/>\n\u2022 \u00bd cup frozen peas (optional)<br \/>\n\u2022 Generous sprinkling of oregano, basil or other herbs of your choice<br \/>\n\u2022 1 teaspoon sea salt (or more to taste)<br \/>\n\u2022 Pepper (from peppercorns)<\/p>\n<h4>Topping<\/h4>\n<p>\u2022 1 head cauliflower<br \/>\n\u2022 1 tsp sea salt<br \/>\n\u2022 Butter or ghee<br \/>\n\u2022 Milk or cream \u2013 preferably raw, unpasteurised (optional)<br \/>\n\u2022 1-2 cups of grated cheese (I use tasty cheddar)<\/p>\n<p>Slice the onions thinly, and saut\u00e9 them in the lard, in a large frying pan, till tender. If you have time to cook them very slowly, on a low heat, with the lid on, they will become very sweet and tender.<\/p>\n<p><a href=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/09\/cottage-pie-2.jpg\"><img loading=\"lazy\" class=\"aligncenter size-full wp-image-1881\" src=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/09\/cottage-pie-2.jpg\" alt=\"\" width=\"600\" height=\"453\" srcset=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/09\/cottage-pie-2.jpg 600w, http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/09\/cottage-pie-2-300x227.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/a><\/p>\n<p>Meanwhile, cut the cauliflower into pieces and put them into a medium sized pan.<\/p>\n<p><a href=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/09\/cottage-pie-1.jpg\"><img loading=\"lazy\" class=\"aligncenter size-full wp-image-1880\" src=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/09\/cottage-pie-1.jpg\" alt=\"\" width=\"600\" height=\"498\" srcset=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/09\/cottage-pie-1.jpg 600w, http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/09\/cottage-pie-1-300x249.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/a><\/p>\n<p>Sprinkle the sea salt into the pan, cover with water and bring to the boil. Simmer till cauli is soft.<\/p>\n<p>When the onions have softened, push the nearly done onions to one side of the frying pan, add a little more fat, and add the ground meat. When one side is a little browned, turn it over and start breaking it up with your spatula. Keep turning and breaking up, till the texture is fairly fine and it\u2019s all coloured. (The ground meat in the photo below is turkey, so is quite pale, beef would be darker)<\/p>\n<p><a href=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/09\/cottage-pie-3.jpg\"><img loading=\"lazy\" class=\"aligncenter size-full wp-image-1882\" src=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/09\/cottage-pie-3.jpg\" alt=\"\" width=\"600\" height=\"392\" srcset=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/09\/cottage-pie-3.jpg 600w, http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/09\/cottage-pie-3-300x196.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/a><\/p>\n<p>Mix them together, and leave simmering. Add chopped mushrooms, herbs and salt, and simmer till the mushrooms are cooked. Add pepper and extra salt if needed and stir in the (optional) frozen peas. Leave on the element, but turn off the heat.<\/p>\n<p>The cauli should be done by now, so drain off the hot water, and add a generous chunk of butter or ghee to the pan. Start by using a knife to chop the cauli into smaller pieces, mixing it round as you go to incorporate the melting butter.<\/p>\n<p><a href=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/09\/cottage-pie-4.jpg\"><img loading=\"lazy\" class=\"aligncenter size-full wp-image-1883\" src=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/09\/cottage-pie-4.jpg\" alt=\"\" width=\"600\" height=\"460\" srcset=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/09\/cottage-pie-4.jpg 600w, http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/09\/cottage-pie-4-300x230.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/a><\/p>\n<p>Then mash it finer. I find a masher doesn\u2019t really work, so I just use a fork to get a rough mash. If it\u2019s still not ready and you want to speed it up, turn your oven to fan forced.<\/p>\n<p>Serve with a salad or other vegetables of your choice.<\/p>\n<h4>Variations<\/h4>\n<p>\u2022 If you have more or less of any ingredient, it will be fine<br \/>\n\u2022 Feel free to add in any other vegetables, herbs or spices that you like<br \/>\n\u2022 If you like tomato \u2013 add a couple of tablespoons of tomato paste or puree<br \/>\n\u2022 If you can\u2019t have mushrooms, but can have nightshades \u2013 use tomato paste instead<br \/>\n\u2022 If you can\u2019t have either tomato or mushroom \u2013 stir through some precooked and mashed pumpkin at the end<br \/>\n\u2022 If you\u2019re vegetarian or vegan \u2013 use your own favourite bean stew under the cauli topping<br \/>\n\u2022 If you\u2019re vegan or dairy free \u2013 omit the butter from the mashed cauli, and use a topping of ground almonds mixed with some turmeric or other spice.<br \/>\n\u2022 If you\u2019re vegan or dairy free, or just hate cauli &#8211; you might find mashed pumpkin to be a nicer topping.
