The texture was quite\u00a0different, but still very good.<\/span><\/p>\n<ul>\n<li><span style=\"font-family: Georgia, 'Times New Roman', serif;\">2 cups ground almonds<\/span><\/li>\n<li><span style=\"font-family: Georgia, 'Times New Roman', serif;\">1 teaspoon baking soda<\/span><\/li>\n<li><span style=\"font-family: Georgia, 'Times New Roman', serif;\">1 teaspoon cinnamon or mixed spice<\/span><\/li>\n<li><span style=\"font-family: Georgia, 'Times New Roman', serif;\">1\/4 teaspoon ground nutmeg<\/span><\/li>\n<li><span style=\"font-family: Georgia, 'Times New Roman', serif;\">3 eggs<\/span><\/li>\n<li><span style=\"font-family: Georgia, 'Times New Roman', serif;\">8 Tbs (100gm, 4oz) butter or <a href=\"http:\/\/www.naturefoods.co.nz\/nutritional-oils\/coconut-oils\">coconut oil<\/a>, melted<\/span><\/li>\n<li><span style=\"font-family: Georgia, 'Times New Roman', serif;\">4 Tbs honey<\/span><\/li>\n<li><span style=\"font-family: Georgia, 'Times New Roman', serif;\">4 Tbs juice from an orange<\/span><\/li>\n<li><span style=\"font-family: Georgia, 'Times New Roman', serif;\">Grated zest of the orange<\/span><\/li>\n<li><span style=\"font-family: Georgia, 'Times New Roman', serif;\">\u00bd teaspoon celtic sea salt<\/span><\/li>\n<li><span style=\"font-family: Georgia, 'Times New Roman', serif;\">1 cup frozen cranberries<\/span><\/li>\n<\/ul>\n<div><span style=\"font-family: Georgia, 'Times New Roman', serif;\">Line a 12 muffin pan with patty pans. In a large bowl, combine almond flour, baking soda and spices.\u00a0\u00a0Stir in cranberries. Blend together eggs, butter or oil, orange juice, honey, salt and zest.\u00a0\u00a0Mix the two together. Pour batter into muffin pans.\u00a0Bake at 350\u00b0 for about 20 minutes. If the tops start to get too brown, cover with some brown paper or foil.
