I\u2019ve been meaning to try out cheese straws for a while, and this got me inspired to try some this Christmas.\u00a0Of course, her stars are made from flour, which is no good for me, or for most of you.<\/p>\n<p>So then I went looking for recipes using almond flour and found <a href=\"https:\/\/elanaspantry.com\/nacho-cheese-triangles\/\" rel=\"noopener\">this recipe for Nacho Cheese Triangles from Elana\u2019s Pantry<\/a>. This one however used egg as the binder, and I wanted an egg free recipe. I also didn\u2019t fancy the spices from either recipe \u2013 ginger in Nigella\u2019s and chilli\/chipotle in Elena\u2019s.<\/p>\n<p>So I came up with my own twist, which is also similar to my <a href=\"http:\/\/www.frot.co.nz\/design\/recipes\/almond-cheese-scones\/\">Cheese Scone<\/a> recipe, but thinner and crisper.<\/p>\n<p><a href=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/12\/cheese-stars-top.jpg\"><img loading=\"lazy\" class=\"aligncenter size-full wp-image-1574\" src=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/12\/cheese-stars-top.jpg\" alt=\"\" width=\"800\" height=\"470\" srcset=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/12\/cheese-stars-top.jpg 800w, http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/12\/cheese-stars-top-300x176.jpg 300w, http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/12\/cheese-stars-top-768x451.jpg 768w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><\/a><\/p>\n<h2>Almond Cheese Stars<\/h2>\n<p>I made a small batch, which made about 20-25 crackers. Next time I might double the recipe. These are the quantities for the small batch.<\/p>\n<p>\u2022 1 cup \/ ~105g \/ just under 4oz ground almonds<br \/>\n\u2022 1 cup \/ 115gm \/ 4 oz grated tasty Cheddar cheese<br \/>\n\u2022 pinch of sea salt<br \/>\n\u2022 1 ml (just under \u00bc tsp) baking soda<br \/>\n\u2022 1 ml (just under \u00bc tsp) allspice<br \/>\n\u2022 50g (2 oz) melted butter<\/p>\n<p>Set oven to 180C (355F). Mix together everything except the butter in a food processor, till the mix is a bit like breadcrumbs.<\/p>\n<p><a href=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/12\/cheese-stars1.jpg\"><img loading=\"lazy\" class=\"aligncenter size-full wp-image-1832\" src=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/12\/cheese-stars1.jpg\" alt=\"\" width=\"600\" height=\"563\" srcset=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/12\/cheese-stars1.jpg 600w, http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/12\/cheese-stars1-300x282.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/a><\/p>\n<p>Melt the butter. Add and beat some more till the mixture is starting to clump together.<\/p>\n<p><a href=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/12\/cheese-stars2.jpg\"><img loading=\"lazy\" class=\"aligncenter size-full wp-image-1833\" src=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/12\/cheese-stars2.jpg\" alt=\"\" width=\"600\" height=\"619\" srcset=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/12\/cheese-stars2.jpg 600w, http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/12\/cheese-stars2-291x300.jpg 291w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/a><\/p>\n<p>Tip out onto a large piece of baking paper. Use your hands to knead it all together, then form it into a square by folding over the different sides of the baking paper and pressing down through the paper.<\/p>\n<p><a href=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/12\/cheese-stars3.jpg\"><img loading=\"lazy\" class=\"aligncenter size-full wp-image-1834\" src=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/12\/cheese-stars3.jpg\" alt=\"\" width=\"600\" height=\"474\" srcset=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/12\/cheese-stars3.jpg 600w, http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/12\/cheese-stars3-300x237.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/a><\/p>\n<p>Fold all of the sides over, and refrigerate for about 15 minutes.<\/p>\n<p><a href=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/12\/cheese-stars4.jpg\"><img loading=\"lazy\" class=\"aligncenter size-full wp-image-1835\" src=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/12\/cheese-stars4.jpg\" alt=\"\" width=\"600\" height=\"578\" srcset=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/12\/cheese-stars4.jpg 600w, http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/12\/cheese-stars4-300x289.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/a><\/p>\n<p>Lay it back on the bench, unfold the paper and lay another sheet of baking paper over the top. Use a rolling pin to roll it out to the thickness you want. I made them fairly thin, which made them nice and crunchy, but they were a bit hard to handle. If you make them thicker, I think they would be crisp on the outside but with a little bit of softer centre.<\/p>\n<p><a href=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/12\/cheese-stars5.jpg\"><img loading=\"lazy\" class=\"aligncenter size-full wp-image-1836\" src=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/12\/cheese-stars5.jpg\" alt=\"\" width=\"600\" height=\"450\" srcset=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/12\/cheese-stars5.jpg 600w, http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/12\/cheese-stars5-300x225.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/a><\/p>\n<p>Cover a baking tray with some clean baking paper and have it nearby. Cut out whatever shapes you fancy, but I went with stars, for a Christmas theme. You\u2019ll see there are two different star shapes.<\/p>\n<p><a href=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/12\/cheese-stars6.jpg\"><img loading=\"lazy\" class=\"aligncenter size-full wp-image-1837\" src=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/12\/cheese-stars6.jpg\" alt=\"\" width=\"600\" height=\"481\" srcset=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/12\/cheese-stars6.jpg 600w, http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/12\/cheese-stars6-300x241.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/a><\/p>\n<p>Carefully remove the excess dough from round the outside. Then slide a knife or spatula under each star and carefully transfer it to the baking tray. If it breaks, you may be able to just push it back together, otherwise put it back with the leftovers to shape into the next batch.<\/p>\n<p>&nbsp;<\/p>\n<p>As I write this, I\u2019m wondering if it might be helpful to cover and refrigerate again after using the cookie cutter, so the mixture firms up again before moving the pieces. I\u2019ll try that next time.<\/p>\n<p>Roll the leftover dough out again and cut more shapes.<\/p>\n<p>Bake for about 8-10 minutes, or until golden brown. I think they would be firm enough to use in dips, or to put a topping such as guacamole on.<\/p>\n<h3>Variations<\/h3>\n<p>Shape \u2013 feel free to use whatever shape cookie cutter you have. Or even easier, cut them into strips for cheese straws, or squares for crackers.<\/p>\n<p>Thickness \u2013 experiment with different thicknesses to get them how you like them. I rolled them quite thin, probably less than half a cm.<\/p>\n<p>Spices \u2013 the allspice I used wasn\u2019t noticeable while eating, but left a little spicy tang on the tongue, so I thought that worked well. I might try a little dry mustard instead next time. Another variation would be to use herbs.
