But I think they would adapt fine for other whole food diets.<\/em><\/strong><\/div>\n<\/div>\n<div class=\"PostFull__body entry-content\">\n<div class=\"MarkdownViewer Markdown\">\n<p>I made a blueberry version of these for Xmas, but previously I\u2019d been making them with choc chips. So I\u2019ll start with that version.<\/p>\n<p><center><img src=\"https:\/\/steemitimages.com\/640x0\/https:\/\/cdn.steemitimages.com\/DQmUYixgYv5LYMpkswcTa4fVpZV5NKwchGshiS33Qk1ZUoN\/maca-muffins0.jpg\" alt=\"maca-muffins0.jpg\" \/><\/center>First off, 150 grams of macadamias go into my mini food processor. They will also grind up in a full size food processor, but seem to get finer in the small one. Or a coffee grinder would probably work. But be careful not to over grind, as you want meal not nut butter.<\/p>\n<p><center><img src=\"https:\/\/steemitimages.com\/640x0\/https:\/\/cdn.steemitimages.com\/DQmV61hAG6xj7mQbAdZ3GMUGHSbNiYJEqwwcP3DNrZWwb3f\/maca-muffins1.jpg\" alt=\"maca-muffins1.jpg\" \/><\/center>Though that\u2019s an idea. Maybe using macadamia butter (like the almond butter in the\u00a0<a href=\"https:\/\/steemit.com\/christmas\/@kiwideb\/my-advent-calendar-10-dec-last-arthritis-class-and-a-sugar-free-brownie-recipe\">brownies<\/a>) would make a better texture. On my list for further testing. Or if anyone else feels like trying it and reporting back\u2026<\/p>\n<p>Ok, so back to the dry ingredients, which then get mixed together in a big bowl:<\/p>\n<p>\u2022 150gm macadamias, ground into meal (see note 1)<br \/>\n\u2022 50 grams of Great Lakes collagen hydrolysate (see note 2)<br \/>\n\u2022 2-4 Tablespoons lakanto (see note 3)<br \/>\n\u2022 \u00bd teaspoon baking soda<br \/>\n\u2022 Pinch sea salt<\/p>\n<p>Note 1 &#8211; I usually use raw, but you can use roasted &amp; salted and just not add salt<\/p>\n<p>Note 2 \u2013 You can use any other protein powder, but you may have to experiment with quantities. I like this because it\u2019s neutral flavoured and quite fine. If you\u2019re not keto, you could also try any gluten free flour.<\/p>\n<p>Note 3 \u2013 Or other natural sweetener of your choice, if you\u2019re not keto. If say, using maple syrup, add to the wet ingredients instead. I use 2 Tablespoons but that won\u2019t be enough for many people. If you&#8217;re doing GAPS, use honey and 2 Tbs might be enough.<\/p>\n<p><center><img src=\"https:\/\/steemitimages.com\/640x0\/https:\/\/cdn.steemitimages.com\/DQmUvtxKoYBFxiksxHUBg3KezBycMZ4x6YwDw1e35Qq8WfK\/maca-muffins2.jpg\" alt=\"maca-muffins2.jpg\" \/><\/center>Then zizz up the wet ingredients in the mini food processor (no need to clean it first):<\/p>\n<p>\u2022 2 eggs<br \/>\n\u2022 3 Tablespoons MCT oil or 42gm melted butter (see note 4)<br \/>\n\u2022 4 Tablespoons coconut milk or coconut cream or liquid cream (see note 5)<br \/>\n\u2022 \u00bd teaspoon orange extract if doing choco chip, vanilla if doing berry, or other extract of your choice<\/p>\n<p>Note 4 \u2013 I usually choose MCT (medium chain triglycerides) oil, to get myself more into ketosis. But I made a special batch yesterday, using melted butter instead of the MCT oil, to see if it worked. It did, so melted coconut oil would also work.<\/p>\n<p>Note 5 \u2013 I think any high fat liquid milk sub would work. Or even a Greek yoghurt. One time I used our homemade runnier yoghurt, though, and that wasn\u2019t as successful.<\/p>\n<p><center><img src=\"https:\/\/steemitimages.com\/640x0\/https:\/\/cdn.steemitimages.com\/DQmaU9AGio5u5grKC3w453TxchYbaU2q2rzYZhAXnZ2zF3U\/maca-muffins3.jpg\" alt=\"maca-muffins3.jpg\" \/><\/center>Mix them together, and let sit for a few minutes for the liquids to fully soak into the dry\u2019s.<\/p>\n<p><center><img src=\"https:\/\/steemitimages.com\/640x0\/https:\/\/cdn.steemitimages.com\/DQmfGo3bWzsPCAPLf1uMVPHPYTER1oHGZXF2h4wwRfqsAiQ\/maca-muffins4.jpg\" alt=\"maca-muffins4.jpg\" \/><\/center>Spoon about a tablespoon into each of 24 mini muffin pans. If you don\u2019t have silicon ones, you need to grease them really well, or cut little bits of baking paper for lining, or use tiny paper cups. None of which I can be faffed doing any more. So if you haven\u2019t got silicon cups, go and buy some!<\/p>\n<p><center><img src=\"https:\/\/steemitimages.com\/640x0\/https:\/\/cdn.steemitimages.com\/DQmQfjQzT7LB4yYQu4jvmqZpmNfCM7f15iAagHvY7acVqYL\/maca-muffins5.jpg\" alt=\"maca-muffins5.jpg\" \/><\/center>Now it\u2019s time to add your little extras. Usually I use these little dark choc baking bits.<\/p>\n<p><center><img src=\"https:\/\/steemitimages.com\/640x0\/https:\/\/cdn.steemitimages.com\/DQmPw55oUjEBMDtXWRwE673NyUUQe9F5c3i48kM2znSL9F6\/maca-muffins6.jpg\" alt=\"maca-muffins6.jpg\" \/><\/center>I pressed 2 into the top of each muffin. There were only a few left over in the bag, so some got 3. Usually I poke them in a bit with a skewer, but this time decided to experiment with just leaving them on top to see if they\u2019d sink by themselves.<\/p>\n<p><center><img src=\"https:\/\/steemitimages.com\/640x0\/https:\/\/cdn.steemitimages.com\/DQmWRLRRQCYS2hyfab9kHimfWSDJbD22uncC5E2R3v9BWBP\/maca-muffins7.jpg\" alt=\"maca-muffins7.jpg\" \/><\/center>If you\u2019re using the MCT oil, don\u2019t cook at more than 160C, and they will take about 25 minutes. If you\u2019re using another fat, you can cook a little hotter for less time.<\/p>\n<p>We can now see that the choc chips didn\u2019t sink, so if you want them inside, poke them in. But I think on top is fine.<\/p>\n<p><center><img src=\"https:\/\/steemitimages.com\/640x0\/https:\/\/cdn.steemitimages.com\/DQmYXFtjDY2upeAY3chYn4QhvV7YHqVCkSbicdLvZdajsQm\/maca-muffins8.jpg\" alt=\"maca-muffins8.jpg\" \/><\/center>When I made some at Christmas, I placed a frozen blueberry on top of each one and pushed it in a tiny bit. They needed to cook for a few more minutes. Those did sink to the bottom! If you&#8217;re GAPS, this is the version for you.<\/p>\n<p><center><img src=\"https:\/\/steemitimages.com\/640x0\/https:\/\/cdn.steemitimages.com\/DQmXntnNGQG875xzGW7QXy3vfQHmYP7NfrbUA9MCQSuJ8kY\/keto-muffins.jpg\" alt=\"keto-muffins.jpg\" \/><\/center><\/p>\n<h2>Note on the silicon baking trays<\/h2>\n<p>I love these things, so much easier to get things out of them. BUT\u2026 keto baking is very soft, and I\u2019m finding the easiest way to get them out is to wait till they\u2019ve cooled, freeze them still in the cups, then peel the cups off. I take them out of the pans, and straight into a plastic ziplock bag and back in the freezer.
