I love her passion for food and her ideas. This morning her recipe for <\/span><a href=\"https:\/\/www.nigella.com\/recipes\/christmas-morning-muffins\"><span style=\"font-family: Georgia, 'Times New Roman', serif;\">Xmas Morning Muffins<\/span><\/a><span style=\"font-family: Georgia, 'Times New Roman', serif;\">\u00a0arrived\u00a0in my Inbox, and I could immediately see how to make them GAPSy. My recipe is a\u00a0variation\u00a0of\u00a0<a href=\"http:\/\/blog.radiantlifecatalog.com\/bid\/59412\/Scrumptious-No-Sugar-Blueberry-Muffins-using-Organic-Coconut-Flour\">Bruce Fife<\/a>&#8216;s Honey Blueberry Coconut Flour muffins.<\/span><\/p>\n<p><span style=\"font-family: Georgia, 'Times New Roman', serif;\">For those who can&#8217;t have coconut, see the <a href=\"http:\/\/www.frot.co.nz\/design\/recipes\/christmas-morning-almond-muffins\/\" target=\"_blank\" rel=\"noopener\">almond flour version<\/a> I tried later in the week.<\/span><\/p>\n<div style=\"clear: both; text-align: center;\"><a style=\"margin-left: 1em; margin-right: 1em;\" href=\"http:\/\/4.bp.blogspot.com\/_XgsTodaivOI\/TP9RxRggwwI\/AAAAAAAABQs\/4ReYIBkyHLg\/s1600\/xmas-muffins.jpg\"><img loading=\"lazy\" class=\"alignright\" src=\"http:\/\/4.bp.blogspot.com\/_XgsTodaivOI\/TP9RxRggwwI\/AAAAAAAABQs\/4ReYIBkyHLg\/s320\/xmas-muffins.jpg\" alt=\"\" width=\"320\" height=\"181\" border=\"0\" \/><\/a><\/div>\n<ul>\n<li><span style=\"font-family: Georgia, 'Times New Roman', serif;\">1\/2 cup sifted coconut flour<\/span><\/li>\n<li><span style=\"font-family: Georgia, 'Times New Roman', serif;\">1\/2 teaspoon baking soda<\/span><\/li>\n<li><span style=\"font-family: Georgia, 'Times New Roman', serif;\">1 teaspoon cinnamon or mixed spice<\/span><\/li>\n<li><span style=\"font-family: Georgia, 'Times New Roman', serif;\">1\/4 teaspoon ground nutmeg<\/span><\/li>\n<li><span style=\"font-family: Georgia, 'Times New Roman', serif;\">6 eggs<\/span><\/li>\n<li><span style=\"font-family: Georgia, 'Times New Roman', serif;\">4 Tbs (50gm, 2oz) butter or <a href=\"http:\/\/www.naturefoods.co.nz\/nutritional-oils\/coconut-oils\">coconut oil<\/a>, melted<\/span><\/li>\n<li><span style=\"font-family: Georgia, 'Times New Roman', serif;\">4 Tbs honey<\/span><\/li>\n<li><span style=\"font-family: Georgia, 'Times New Roman', serif;\">4 Tbs juice from an orange<\/span><\/li>\n<li><span style=\"font-family: Georgia, 'Times New Roman', serif;\">Grated zest of the orange<\/span><\/li>\n<li><span style=\"font-family: Georgia, 'Times New Roman', serif;\">1\/2 teaspoon fine sea salt<\/span><\/li>\n<li><span style=\"font-family: Georgia, 'Times New Roman', serif;\">1 cup frozen cranberries<\/span><\/li>\n<\/ul>\n<div><span style=\"font-family: Georgia, 'Times New Roman', serif;\">Grease a 12 pan muffin tray with <a href=\"http:\/\/www.frot.co.nz\/design\/recipes\/dr-fifes-magic-oil\/\">Dr Fife&#8217;s magic oi<\/a>l, or line with baking paper. Sift the coconut flour, baking soda and spices into a bowl and mix thoroughly.\u00a0Blend together eggs, butter or oil, orange juice, honey, salt and zest.\u00a0<\/span><span style=\"font-family: Georgia, 'Times New Roman', serif;\">\u00a0<\/span><span style=\"font-family: Georgia, 'Times New Roman', serif;\">Mix the two together until there are no lumps.\u00a0<\/span><span style=\"font-family: Georgia, 'Times New Roman', serif;\">\u00a0Stir in cranberries. Pour batter into muffin pans.\u00a0 Bake at 400 degrees F (205C) for about 16-18 minutes.\u00a0 Makes 12. (If you want to make fewer,\u00a0bigger muffins, adjust cooking time accordingly.)<\/span><\/div>\n<div>\n<p><span style=\"font-family: Georgia, 'Times New Roman', serif;\">Note that there is a small amount of baking soda, which is technically not GAPS legal. For most people, that small amount shouldn&#8217;t cause a problem, and I think the texture would really suffer if you left it out. Use your own judgement, or talk to your GAPS\u00a0practitioner\u00a0about it.<\/span><span style=\"font-family: Georgia, 'Times New Roman', serif;\">For my first trial, I used just the mixed spice (in place of the original cinnamon and nutmeg). Ian thought it was spicy enough, but I\u00a0didn&#8217;t, so next time I&#8217;ll add the 1\/4 tsp nutmeg as well.<\/span><\/p>\n<p><span style=\"font-family: Georgia, 'Times New Roman', serif;\">They came out a nice consistency, both warm and cold, and didn&#8217;t need a spread. But they would be extra good with <a href=\"http:\/\/www.naturefoods.co.nz\/nutritional-oils\/coconut-oils\/green-pasture-coconut-ghee\">ghee<\/a>, sour cream, or yoghurt cheese. Or maybe even sour cream or yoghurt cheese mixed with some lemon juice and honey.<\/span><\/p>\n<p><span style=\"font-family: Georgia, 'Times New Roman', serif;\">Next day PS: We just had one each out of the fridge for morning tea. Ian had his plain and I cut mine open and spread with <a href=\"http:\/\/www.naturefoods.co.nz\/nutritional-oils\/coconut-oils\/green-pasture-coconut-ghee\">coconut ghee<\/a>.
