Here are some ideas for chocolate replacements. And the links at the bottom have some non food ideas.<\/span><\/p>\n<p><span lang=\"EN-AU\">Most people on gluten or starch free diets will be able to tolerate <a href=\"http:\/\/www.naturefoods.co.nz\/other-foods\/cacao-products\/cacao-butter-250\">cocoa butter<\/a>, as its fully fat. You need to melt it before using in these recipes. The easiest way is to chop it up finely, then put it in a bowl on top of a pan of gently simmering water. If you want to maintain its raw status, melt it a small bowl inside a larger bowl of hot tap water. Keep replacing the hot water, until it\u2019s completely melted, which will take a lot longer.<\/span><\/p>\n<\/div>\n<div><\/div>\n<div><span lang=\"EN-AU\">Another whole food that\u2019s good for making fudge like confections is <a href=\"http:\/\/www.naturefoods.co.nz\/coconut-products\/zenian-creamed-coconut\">creamed coconut (or coconut butter)<\/a>. It\u2019s very solid to start with, but softens up when gently heated, which can also be done over a pan of simmering water.<\/span><\/div>\n<div><\/div>\n<div><span lang=\"EN-AU\"><a href=\"http:\/\/www.naturefoods.co.nz\/coconut-products\/zenian-coconut-oil-thailand\">Coconut oil<\/a> is also used in some of these recipes. You can place your whole jar of oil in a container of hot water, or measure out what you need and melt it in a pan.<\/span><\/div>\n<div><\/div>\n<div><span lang=\"EN-AU\">Try different combinations of these, flavoured with vanilla essence, dried fruit, citrus fruits, spices or <a href=\"http:\/\/www.naturefoods.co.nz\/other-foods\/cacao-products\/cacao-powder-250\">raw cocoa powder<\/a>. Although GAPS doesn\u2019t allow cocoa or carob, some people find they can tolerate them if they&#8217;re far enough into healing, so use your discretion. <\/span><\/div>\n<div><\/div>\n<div><span lang=\"EN-AU\">I prefer a little honey as the sweetener. When using honey, it doesn\u2019t mix well with the oils and often separates out. So for the recipes that use a lot of fat, let the mixture cool in the fridge, still in the mixer, taking out and beating from time to time, till it\u2019s almost set. THEN add the honey and process again. Or try your own favourite sweetener instead.<\/span><\/div>\n<div><\/div>\n<div><span lang=\"EN-AU\">Pour into a flat tray lined with baking paper, mark into squares, then refrigerate till set. Or roll<\/span><span lang=\"EN-AU\"> into small balls to make truffles. <\/span><span lang=\"EN-AU\">The oilier mixtures can also be poured into chocolate moulds. In the picture below I&#8217;ve used Easter egg, star and heart shaped moulds.<\/span><\/div>\n<div><\/div>\n<div><span lang=\"EN-AU\">Store in the fridge. The ones that are mostly creamed coconut might need to sit at room temp for a few minutes before serving, but the ones that are higher in <a href=\"http:\/\/www.naturefoods.co.nz\/other-foods\/cacao-products\/cacao-butter-250\">cocoa butter<\/a> or <a href=\"http:\/\/www.naturefoods.co.nz\/coconut-products\/zenian-coconut-oil-thailand\">coconut oil<\/a> will melt if left out too long.<\/span><\/div>\n<h3><span lang=\"EN-AU\">WHITE CHOCOLATE\u00a0WITH NUTS<\/span><\/h3>\n<ul>\n<li><span lang=\"EN-AU\">2 cups raw or crispy (ie. soaked then dehydrated) macadamias or cashews<\/span><\/li>\n<li><span lang=\"EN-AU\">75g <a href=\"http:\/\/www.naturefoods.co.nz\/other-foods\/cacao-products\/cacao-butter-250\">cocoa butter<\/a>, melted<\/span><\/li>\n<li><span lang=\"EN-AU\">25g <a href=\"http:\/\/www.naturefoods.co.nz\/nutritional-oils\/coconut-oils\/zenian-coconut-oil-thailand\">coconut oil<\/a>, melted<\/span><\/li>\n<li><span lang=\"EN-AU\">2 Tbs honey <\/span><\/li>\n<li><span lang=\"EN-AU\">1 tsp vanilla<\/span><\/li>\n<\/ul>\n<div><span lang=\"EN-AU\">Zizz up the nuts in a food processor. Melt the cocoa butter and coconut oil. Add to the food processor, along with the vanilla, and combine well. Put the food processor into the fridge until nearly set. Take out a couple of times and give it another zizz, then back into the fridge. <\/span><\/div>\n<div><\/div>\n<div><span lang=\"EN-AU\">Once it\u2019s thick but not completely set, add the honey and zizz well. Spoon into chocolate moulds or into a flat tray lined with baking paper. Or roll into small balls to make truffles.<\/span><br \/>\n<span lang=\"EN-AU\">\u00a0 <\/span><br \/>\n<span lang=\"EN-AU\">Variation:\u00a0<\/span><span lang=\"EN-AU\">&amp; 2-3 Tbs raw <a href=\"http:\/\/www.naturefoods.co.nz\/other-foods\/cacao-products\/cacao-powder-250\">cocoa powder<\/a><\/span><\/div>\n<div><\/div>\n<div>Try these other combinations using the same basic method, or make up your own.<\/div>\n<h3><span lang=\"EN-AU\">COCONUT WHITE CHOCOLATE\u00a0<\/span><\/h3>\n<ul>\n<li><span lang=\"EN-AU\">100g <a href=\"http:\/\/www.naturefoods.co.nz\/coconut-products\/coconut-sugars\/zenian-creamed-coconut\">creamed coconut<\/a>, softened<\/span><\/li>\n<li><span lang=\"EN-AU\">100g <a href=\"http:\/\/www.naturefoods.co.nz\/other-foods\/cacao-products\/cacao-butter-250\">cocoa butter<\/a>, melted<\/span><\/li>\n<li><span lang=\"EN-AU\">1 tsp vanilla<\/span><\/li>\n<li><span lang=\"EN-AU\">2 tsp honey<\/span><\/li>\n<\/ul>\n<div><span lang=\"EN-AU\">Variation: <\/span><span lang=\"EN-AU\">&amp; 2-3 Tbs raw <a href=\"http:\/\/www.naturefoods.co.nz\/other-foods\/cacao-products\/cacao-powder-250\">cocoa powder<\/a>\u00a0<span lang=\"EN-AU\">(pictured)<\/span><\/span><\/div>\n<h3>\u00a0<span lang=\"EN-AU\">COCONUT ORANGE FUDGE <\/span><\/h3>\n<ul>\n<li><span lang=\"EN-AU\">1 cup <a href=\"http:\/\/www.naturefoods.co.nz\/coconut-products\/coconut-sugars\/zenian-creamed-coconut\">creamed coconut<\/a>, softened<\/span><\/li>\n<li><span lang=\"EN-AU\">1 teaspoon <a href=\"http:\/\/www.naturefoods.co.nz\/nutritional-oils\/coconut-oils\/zenian-coconut-oil-thailand\">coconut oil<\/a>, melted<\/span><\/li>\n<li><span lang=\"EN-AU\">1-2 tablespoons honey<\/span><\/li>\n<li><span lang=\"EN-AU\">1-2 Tbs grated orange rind<\/span><\/li>\n<li><span lang=\"EN-AU\">Optional: orange oil<\/span><\/li>\n<\/ul>\n<p>Variation:\u00a0Replace the orange oil and rind with 1 tsp vanilla and a splash of almond or other essence.<\/p>\n<p>Mix in a handful or nuts and\/or raisins before forming into truffles.<\/p>\n<h3><span lang=\"EN-AU\">COCONUT FRUIT FUDGE <\/span><\/h3>\n<ul>\n<li><span lang=\"EN-AU\">200g <a href=\"http:\/\/www.naturefoods.co.nz\/coconut-products\/coconut-sugars\/zenian-creamed-coconut\">creamed coconut<\/a>\u00a0<\/span><\/li>\n<li><span lang=\"EN-AU\"><span lang=\"EN-AU\">1-2 teaspoons <a href=\"http:\/\/www.naturefoods.co.nz\/nutritional-oils\/coconut-oils\/zenian-coconut-oil-thailand\">coconut oil<\/a><\/span><\/span><\/li>\n<li><span lang=\"EN-AU\"><span lang=\"EN-AU\"><span lang=\"EN-AU\">a little honey added at the end if needed<\/span><\/span><\/span><\/li>\n<li><span lang=\"EN-AU\">some chopped dried fruit, eg:<\/span><\/li>\n<li><span lang=\"EN-AU\">4 fresh dates \u2013 or \u2013\u00a0<\/span>4-6 dried apricots<\/li>\n<\/ul>\n<h3><span lang=\"EN-AU\">COCONUT CHOCOLATE FUDGE<\/span><\/h3>\n<ul>\n<li><span lang=\"EN-AU\">200g <a href=\"http:\/\/www.naturefoods.co.nz\/coconut-products\/coconut-sugars\/zenian-creamed-coconut\">creamed coconut<\/a><\/span><\/li>\n<li><span lang=\"EN-AU\">1 Tbs raw <a href=\"http:\/\/www.naturefoods.co.nz\/other-foods\/cacao-products\/cacao-powder-250\">cocoa powder<\/a><\/span><\/li>\n<li><span lang=\"EN-AU\">1 Tbs carob or extra cocoa<\/span><\/li>\n<li><span lang=\"EN-AU\">1-2 tsp natural sweetener of your choice<\/span><\/li>\n<\/ul>\n<p><span lang=\"EN-AU\">Variation: <\/span><span lang=\"EN-AU\">&amp; 2-3 Tbs raw <a href=\"http:\/\/www.naturefoods.co.nz\/other-foods\/cacao-products\/cacao-powder-250\">cocoa powder <\/a><\/span><span lang=\"EN-AU\"><br \/>\n<\/span><\/p>\n<p>OR for something completely different, this chocolate substitute recipe that Shelley sent me: Mix together pureed dates, pecan butter and a little honey<\/p>\n<p>There are more variations on <a href=\"http:\/\/www.frot.co.nz\/design\/recipes\/healthy-real-food-snacks-chocolate-and-fudge\/\">this updated post<\/a><\/p>\n<p>For more Easter ideas, see <a href=\"http:\/\/gapsguide.com\/2010\/03\/08\/easter-coming\/#more-1578\">this pos<\/a>t and <a href=\"http:\/\/gapsguide.com\/2010\/03\/17\/my-easter-plan\/#more-1584\">this post<\/a> on Baden&#8217;s GAPS Guide.
