{"id":608,"date":"2007-12-11T17:28:51","date_gmt":"2007-12-11T04:28:51","guid":{"rendered":"http:\/\/www.frot.co.nz\/design\/recipes\/?p=608"},"modified":"2021-05-18T09:42:59","modified_gmt":"2021-05-17T21:42:59","slug":"lemony-kidneys","status":"publish","type":"post","link":"http:\/\/www.frot.co.nz\/design\/recipes\/lemony-kidneys\/","title":{"rendered":"Lemony kidneys"},"content":{"rendered":"<p style=\"text-align: left;\" align=\"center\">Kidneys must be very fresh, and preferably from organic, grass fed animals.<\/p>\n<ul>\n<li style=\"text-align: left;\">2-3 lambs kidneys, per person<\/li>\n<li style=\"text-align: left;\">lemon juice<\/li>\n<li style=\"text-align: left;\">butter, <a href=\"http:\/\/www.naturefoods.co.nz\/nutritional-oils\/coconut-oils\/green-pasture-coconut-ghee\">ghee<\/a> or other \u201cgood\u201d fat of choice<\/li>\n<li style=\"text-align: left;\">salt and pepper<\/li>\n<li style=\"text-align: left;\">arrowroot (optional)<\/li>\n<\/ul>\n<p style=\"text-align: left;\" align=\"center\">If the kidneys still have a skin on them, peel that off. But leave the knob of fat on the underside, this is very nourishing. Cut each kidney into quarters, and put them all into a bowl or jug. Cover with lemon juice, and stir well. Leave marinating for about 8 hours, stirring occasionally if possible.<\/p>\n<p style=\"text-align: left;\" align=\"center\">Drain the kidneys and wipe dry with a paper towel. Panfry in butter with a little sea salt, till just pink inside. Serve at once with hot buttered toast (made from homemade bread, see lesson 4). If there is a lot of runny sauce left over, it will soak into the toast. If you\u2019re serving as entr\u00e9e, or don\u2019t like soggy toast, you can thicken with a little arrowroot, mixed with cold water.<\/p>\n<p><strong>To serve:<\/strong><\/p>\n<ul>\n<li style=\"text-align: left;\">Pile on toast, for a breakfast dish, or serve with hash browns, or other cooked veges such as pumpkin.<\/li>\n<li style=\"text-align: left;\">Serve with thin slices of toast, cut into triangles and with the crust cut off, as an entree<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Kidneys must be very fresh, and preferably from organic, grass fed animals. 2-3 lambs kidneys, per person lemon juice butter, ghee or other \u201cgood\u201d fat of choice salt and pepper arrowroot (optional) If the kidneys still have a skin on them, peel that off.
