Using a combination of coconut flour, ground almonds and arrowroot gives a nice texture. If you need to be starch free, omit the arrowroot, and add a bit more ground almonds.<\/p>\n<ul>\n<li style=\"text-align: left;\">2 eggs<\/li>\n<li style=\"text-align: left;\">2 Tbs raw milk, yoghurt or coconut cream<\/li>\n<li style=\"text-align: left;\">2 Tbs (1 oz) butter or <a href=\"http:\/\/www.naturefoods.co.nz\/nutritional-oils\/coconut-oils\">coconut oil<\/a>, melted<\/li>\n<li style=\"text-align: left;\">2 Tbs sifted coconut flour<\/li>\n<li style=\"text-align: left;\">2 Tbs ground almonds<\/li>\n<li style=\"text-align: left;\">2 Tbs arrowroot<\/li>\n<li style=\"text-align: left;\">Pinch sea salt<\/li>\n<\/ul>\n<p style=\"text-align: left;\" align=\"center\">Beat together well, then cook in the usual way. This amount makes 4 medium size pancakes or about 8 pikelets, so adjust the qty as needed.<\/p>\n<p style=\"text-align: left;\" align=\"center\"><strong>Variations:<\/strong><\/p>\n<p style=\"text-align: left;\" align=\"center\">These are a bit harder to turn, so make smaller ones, more like pikelet size<\/p>\n<ul>\n<li style=\"text-align: left;\">Apple pancakes \u2013 add \u00bd grated apple and some cinnamon<\/li>\n<li style=\"text-align: left;\">Banana pancakes \u2013 replace milk with a small (or \u00bd large) mashed banana and a pinch of nutmeg .
