{"id":766,"date":"2005-11-02T12:28:41","date_gmt":"2005-11-01T23:28:41","guid":{"rendered":"http:\/\/www.frot.co.nz\/design\/recipes\/?p=766"},"modified":"2021-05-18T09:43:07","modified_gmt":"2021-05-17T21:43:07","slug":"chocolate-macadamia-muffins-makes-10-muffins","status":"publish","type":"post","link":"http:\/\/www.frot.co.nz\/design\/recipes\/chocolate-macadamia-muffins-makes-10-muffins\/","title":{"rendered":"Chocolate Macadamia Muffins (Makes 10 muffins)"},"content":{"rendered":"<p style=\"text-align: left;\" align=\"center\">Mix together thoroughly in a large bowl:<\/p>\n<ul>\n<li style=\"text-align: left;\">1 cup \u201ccrispy\u201d macadamias, ground as fine as you can get them\u00a0OR ground \u201ccrispy\u201d almonds, or ground almonds<\/li>\n<li style=\"text-align: left;\">\u00bd cup fine dessicated coconut, ground up even finer in food processor<\/li>\n<li style=\"text-align: left;\">\u00bd cup arrowroot<\/li>\n<li style=\"text-align: left;\">4 Tbs <a href=\"http:\/\/www.naturefoods.co.nz\/other-foods\/cacao-products\">cocoa<\/a>, sifted<\/li>\n<li style=\"text-align: left;\">1 tsp baking soda, sifted<\/li>\n<li style=\"text-align: left;\">1\/2 tsp cream of tartar, sifted<\/li>\n<li style=\"text-align: left;\">pinch of sea salt<\/li>\n<\/ul>\n<p style=\"text-align: left;\">Beat together:<\/p>\n<ul>\n<li style=\"text-align: left;\">4 oz butter or <a href=\"http:\/\/www.naturefoods.co.nz\/nutritional-oils\/coconut-oils\">coconut oil<\/a>, melted<\/li>\n<li style=\"text-align: left;\">4 Tbs rapadura or maple syrup *<\/li>\n<li style=\"text-align: left;\">2 eggs<\/li>\n<li style=\"text-align: left;\">\u00bd cup unsweetened apple puree<\/li>\n<\/ul>\n<p style=\"text-align: left;\" align=\"center\">Pour the wet ingredients into the dry and mix. Let sit for a few minutes while you prepare the pans. Line the 10 outside muffin pans with patty pans (paper liners). Spoon mixture into pans &amp; bake for about 30 mins at 150C (300F).<\/p>\n<p><strong>Variations:<\/strong><\/p>\n<ul style=\"text-align: left;\">\n<li>Blueberry-Choc: Add \u00bd cup frozen blueberries<\/li>\n<li>Banana-Choc: Replace the apple puree with 1 \u00bd mashed bananas.<\/li>\n<li>Double-Choc: Add up to \u00bd cup chips of unsweetened or naturally sweetened chocolate<\/li>\n<li>Ice any version with chocolate glaze.
