{"id":769,"date":"2005-11-19T12:30:14","date_gmt":"2005-11-18T23:30:14","guid":{"rendered":"http:\/\/www.frot.co.nz\/design\/recipes\/?p=769"},"modified":"2021-05-18T09:43:06","modified_gmt":"2021-05-17T21:43:06","slug":"low-carb-raspberry-cupcakes","status":"publish","type":"post","link":"http:\/\/www.frot.co.nz\/design\/recipes\/low-carb-raspberry-cupcakes\/","title":{"rendered":"Low Carb raspberry cupcakes"},"content":{"rendered":"<p style=\"text-align: left;\">Adapted from Breaking The Vicious Cycle, by <em>Elaine Gottschall<\/em><\/p>\n<ul style=\"text-align: left;\">\n<li>2 cups ground crispy almonds<\/li>\n<li>\u00bd cup dried coconut, ground to a powder<\/li>\n<li>\u00bc cup (4 Tbs) melted butter, <a href=\"http:\/\/www.naturefoods.co.nz\/nutritional-oils\/coconut-oils\">coconut oil<\/a>, coconut cream, yoghurt or kefir<\/li>\n<li>4 tbs liquid or slightly melted honey*<\/li>\n<li>\u00bd teaspoon baking soda<\/li>\n<li>pinch sea salt<\/li>\n<li>3 eggs<\/li>\n<li>\u00bd cup fresh or frozen raspberries<\/li>\n<\/ul>\n<p style=\"text-align: left;\" align=\"center\">* This can be reduced, or try a combination of stevia and glycerine. 2 Tbs honey and 1 Tbs glycerine is one combination that works well.<\/p>\n<p style=\"text-align: left;\" align=\"center\">Preheat oven to 190C. Mix together ground nuts, optional coconut and frozen berries. Beat together the eggs with the butter, sweetener, sea salt and baking soda. Mix both together, to form a batter. If too runny, add extra ground nuts. If too dry, add extra butter. Line muffin or cupcake tins with patty pan liners. Fill each one about half full. Bake at 175C (350F) for 15-20 minutes or till they spring back when pressed.
