{"id":796,"date":"2006-05-09T13:42:57","date_gmt":"2006-05-09T01:42:57","guid":{"rendered":"http:\/\/www.frot.co.nz\/design\/recipes\/?p=796"},"modified":"2021-05-18T09:43:04","modified_gmt":"2021-05-17T21:43:04","slug":"ginger-cashew-chicken","status":"publish","type":"post","link":"http:\/\/www.frot.co.nz\/design\/recipes\/ginger-cashew-chicken\/","title":{"rendered":"Ginger cashew chicken (Serves 4)"},"content":{"rendered":"<ul>\n<li style=\"text-align: left;\">750g chicken breast (or turkey breast or tenderloins)<\/li>\n<li style=\"text-align: left;\">3 Tbs tamari<\/li>\n<li style=\"text-align: left;\">about 3 Tbs oil (either peanut oil, chicken fat or olive oil, with a tsp sesame oil if you have it)<\/li>\n<li style=\"text-align: left;\">2 Tbs fresh ginger<\/li>\n<li style=\"text-align: left;\">4 large cloves garlic<\/li>\n<li style=\"text-align: left;\">3 spring onions<\/li>\n<li style=\"text-align: left;\">1 tsp sugar free chilli sauce (eg Mama Africa\u2019s Red Chilli)<\/li>\n<li style=\"text-align: left;\">1 head broccoli (or similar amount of other green vege eg. Broccolini, Bok choy, Chinese cabbage)<\/li>\n<li style=\"text-align: left;\">1 small tin water chestnuts, drained and sliced (optional)<\/li>\n<li style=\"text-align: left;\">1 cup \u201ccrispy\u201d cashews<\/li>\n<\/ul>\n<p style=\"text-align: left;\" align=\"center\">Dice the chicken and marinate in the tamari all day, or for at least 2 hours.<\/p>\n<p style=\"text-align: left;\" align=\"center\">Chop broccoli (or other vege) into small pieces and put into a steamer. Slice the spring onion, and mince or finely chop the garlic and peeled ginger. Saut\u00e9 the onion, garlic and ginger in 1 Tbs of the oil, then add the chilli sauce and saut\u00e9 for another 20 seconds or so. Scrap out of the pan into a small bowl. Set the broccoli to steam. Cook up the chicken in a frypan the rest of the oil. When the chicken is cooked, the broccoli should be just cooked. Add to the pan, along with the garlic\/ginger mix, the water chestnuts and the crispy cashews. Stir through for a couple of minutes to mix together and warm through. Serve as is, or with some basic brown rice.<\/p>\n<p style=\"text-align: left;\" align=\"center\">If desired you can also make a gravy from some chicken stock, and arrowroot.
