{"id":855,"date":"2012-06-27T16:36:09","date_gmt":"2012-06-27T04:36:09","guid":{"rendered":"http:\/\/www.frot.co.nz\/design\/recipes\/?p=855"},"modified":"2021-05-18T09:42:42","modified_gmt":"2021-05-17T21:42:42","slug":"marinated-fish-in-coconut-cream","status":"publish","type":"post","link":"http:\/\/www.frot.co.nz\/design\/recipes\/marinated-fish-in-coconut-cream\/","title":{"rendered":"Marinated Fish in Coconut Cream"},"content":{"rendered":"<ul>\n<li style=\"text-align: left;\">\u00bd cup lemon juice (3-5 lemons approx)<\/li>\n<li style=\"text-align: left;\">1 tsp sea salt<\/li>\n<li style=\"text-align: left;\">500g (1\/2 lb) firm white fish (see note below for good types of fish)<\/li>\n<li style=\"text-align: left;\">approx 100ml (1\/2 cup) coconut cream<\/li>\n<li style=\"text-align: left;\">slice of red onion, chopped up finely<\/li>\n<li style=\"text-align: left;\">about \u00bc telegraph cucumber, chopped up small<\/li>\n<li style=\"text-align: left;\">handful of cherry tomatoes, halved<\/li>\n<li style=\"text-align: left;\">mesclun or other lettucy type greens<\/li>\n<\/ul>\n<p style=\"text-align: left;\" align=\"center\">Start preparation 24 hours before you want to serve. Mix the lemon juice and the salt together in a medium sized bowl. Cut the fish into chunks that are roughly 2 cm (just under 1\u201d) a side, and mix together well. Press the fish down, so that the juice covers it. If the lemon juice doesn\u2019t cover the fish, add a little extra. Marinate in the fridge for 24 hours, stirring occasionally.<\/p>\n<p style=\"text-align: left;\" align=\"center\">Drain the fish well, put into a clean bowl and stir in the coconut cream. I don\u2019t measure it; I just slosh in enough so that the fish has a nice coating. Chop up the salad veges and stir them in. (The amounts given are approximate and will depend on your taste and how you are going to serve it. If you are serving it as a main meal, you\u2019ll want to add more vegetables than if it\u2019s an entr\u00e9e. You can vary the vegetables as well, eg by using spring onions or capsicum.)<\/p>\n<p style=\"text-align: left;\" align=\"center\"><strong>Variations:<\/strong><\/p>\n<ul>\n<li style=\"text-align: left;\">As an entree (serves 4-5): Line each serving bowl with lettuce and top with the fish mixture.<\/li>\n<li style=\"text-align: left;\">As a main course (serves 2-3), line a large serving bowl with greens. Top with baked kumara, yams or sweet potato. Finish with spoonfuls of the fish.<\/li>\n<li style=\"text-align: left;\">As kebabs. Leave the fish to sit in the coconut cream for an hour or two. Then thread onto skewers, alternating pieces of fish with your choice of raw salad vegetables \u2013 e.g. cherry tomatoes, cucumber, red onion, capsicum, radish or baby turnips.
