{"id":868,"date":"2014-01-02T16:51:36","date_gmt":"2014-01-02T03:51:36","guid":{"rendered":"http:\/\/www.frot.co.nz\/design\/recipes\/?p=868"},"modified":"2021-05-18T09:42:40","modified_gmt":"2021-05-17T21:42:40","slug":"chicken-liver-pate","status":"publish","type":"post","link":"http:\/\/www.frot.co.nz\/design\/recipes\/chicken-liver-pate\/","title":{"rendered":"Chicken liver pate"},"content":{"rendered":"<ul>\n<li style=\"text-align: left;\">50gm (2oz) butter or duck fat<\/li>\n<li style=\"text-align: left;\">1 onion, chopped<\/li>\n<li style=\"text-align: left;\">3 cloves garlic, crushed<\/li>\n<li style=\"text-align: left;\">approx 225gm (1\/2 lb) brown mushrooms (a bit more or less is fine)<\/li>\n<li style=\"text-align: left;\">1 bayleaf<\/li>\n<li style=\"text-align: left;\">approx 450gm (1 lb) chicken livers (a bit more or less is fine)<\/li>\n<li style=\"text-align: left;\">a little sea salt<\/li>\n<li style=\"text-align: left;\">15ml (1 Tbs) brandy, sherry or port (optional)<\/li>\n<li style=\"text-align: left;\">\u00bd cup (125 ml) cream, plain or cultured \u2013 or \u2013 50 gm (2 oz) softened butter or duck fat<\/li>\n<\/ul>\n<p style=\"text-align: left;\" align=\"center\">Saut\u00e9 onion, garlic, mushrooms and bayleaf in butter in a large frypan. Turn up heat &amp; add chicken livers and sea salt. Cook quickly for 5-10 mins till just cooked. Take off the heat, take out the bayleaf &amp; let cool. Put into food processor, along with the brandy, and cream or butter. Blend till smooth. This will do about 3 bowlfuls. To keep for a few days \u2013 pour a layer of melted butter carefully over the top of the pate. This could take \u00bd a lb of butter. Make sure it completely covers the pate, and seals it in the bowl. Store in the fridge, and chip the butter off just before serving.<\/p>\n<h4 style=\"text-align: left;\" align=\"center\">Serving suggestions:<\/h4>\n<ul>\n<li style=\"text-align: left;\">This is quite a soft pate, which can be served with toast or crackers, or serve as a dip, with corn chips, toasted pita breads and raw vege sticks<\/li>\n<li style=\"text-align: left;\">Makes a very satisfying quick breakfast with vege sticks.
