BAKING RECIPES


Here are some wheat free baking recipes.  Unless stated, they are not gluten-free. Mostly they are not suitable for a strict whole food diet.


SPICY ALMOND COOKIES
   (Makes about 2 dozen) 

These cookies (without the optional extras) are wheat & gluten free, sugar free and almost totally carb free, and can be eaten on a whole food diet.

ZUCCHINI MUFFINS

This recipe was inspired by a recipe in Dr Cabot's Healthy Liver and Bowel book. Makes approx 18.

Preheat oven to 200C. Beat together in food processor :  

  • Eggs - 5

  • Braggs Amino Acids (or wheat free tamari) - a slosh

  • Celtic sea salt  - a pinch

  • Paprika - a sprinkling

  • Lemon juice (or cider vinegar, ) - 1/2 tsp

Add, and beat till thick & creamy :  

  • Olive oil - 1/2 cup
  • Baking soda -1/4 tsp 
  • Cream of tartar - 1/2 tsp 

In a big bowl, mix together :              

  • Zucchini, grated - 400g or 14oz (approx 4 med)

  • Carrot, grated - 200g or 7oz (approx 2 med)

  • Red onion, chopped finely - 1 large

  • Garlic - 2 cloves (chopped finely or crushed) - OPTIONAL

  • Red pepper, chopped - couple of Tbs - OPTIONAL

  • Pumpkin seeds - 1-2 Tbs

  • Sunflower seeds - 1-2 Tbs

  • Parsley, chopped - 1/2 cup - OPTIONAL, or try other fresh or dried herbs, or spinach

Add the egg mixture & mix well. Carefully fold in : 

  • Flour - 6 oz (Buckwheat OR equal quantities buckwheat & millet OR equal quantities buckwheat, millet & split pea – mixing the flours gives a better flavour)

If required, add a little more buckwheat flour to get to a cake mix consistency. Spoon mixture in greased muffin pans, & bake at 200C for 30-40mins or until brown    


CARROT CAKE (Wheat-free)

  • 1/2 cup spelt flour
  • 1/2 cup amaranth flour
  • 1/2 cup oat flour
  • 1/2 cup fine brown rice flour (or no oat flour, 2/3 cup each of others)
  • 2 teaspoon baking powder *
  • 2 teaspoon baking soda
  • 2 teaspoon cinnamon (optional)
  • 350g can unsweetened apple sauce
  • 1/2 cup maple syrup or runny honey **
  • 1/2 cup unrefined sugar **
  • 4 organic eggs (or 8 egg whites for A's)
  • 3 cup finely shredded organic carrot
  • 1 cup raisins, sultanas or currants
Here are some suggested replacements, but be careful when using them. Usually best to try one change at a time. 
* 1 tsp baking powder can be replaced by 1/2 tsp cream of tartar & 1/4 tsp baking soda, to make it totally wheat & corn free.  
** The honey & sugar can be replaced by about 1/4 tsp stevia extract (depending on the strength of your brand) and a couple of tablespoons of honey or maple syrup.  

In a large bowl, combine flour, baking powder, baking soda, and cinnamon. In food processor, beat together eggs, maple syrup or honey & sugar. Add apple sauce, & mix well. Add to dry mixture, along with carrots and sultanas. If mixture is too runny, add a couple more tablespoons spelt flour. Cook in a ring tin at 200C for 1 hr or till done.
