This one is for those who can&#8217;t have grains, nuts or coconut. It has GF white flours, so isn&#8217;t completely whole foods, and is quite high carb, so have with plenty of butter.<\/p>\n<p style=\"text-align: left;\" align=\"center\">Preheat oven to 150C\/300F.<\/p>\n<p style=\"text-align: left;\" align=\"center\">Beat together:<\/p>\n<ul>\n<li style=\"text-align: left;\">2 eggs<\/li>\n<li style=\"text-align: left;\">\u00bd cup <a href=\"http:\/\/www.naturefoods.co.nz\/coconut-products\/zenian-coconut-oil-thailand\">coconut oil<\/a> or butter<\/li>\n<li style=\"text-align: left;\">\u00bd cup unrefined sugar<\/li>\n<li style=\"text-align: left;\">\u00bd cup apple puree<\/li>\n<\/ul>\n<p style=\"text-align: left;\" align=\"center\">Thoroughly mix together:<\/p>\n<ul>\n<li style=\"text-align: left;\">1 cup white rice flour or cornflour *<\/li>\n<li style=\"text-align: left;\">1 cup arrowroot (or potato starch)<\/li>\n<li style=\"text-align: left;\">1 tsp pectin, xantham gum or guar gum<\/li>\n<li style=\"text-align: left;\">2 tsp GF baking powder (or 1\/2 tsp baking soda, plus 1 tsp cream of tartar)<\/li>\n<li style=\"text-align: left;\">4 Tbs <a href=\"http:\/\/www.naturefoods.co.nz\/other-foods\/cacao-products\/cacao-powder-250\">cocoa<\/a><\/li>\n<li style=\"text-align: left;\">\u00bc &#8211; \u00bd cup dark choc chips (opt)<\/li>\n<\/ul>\n<p style=\"text-align: left;\" align=\"center\">Carefully fold the wet and dry ingredients together. Line a 12 muffin tray with pattie pans. Spoon into pans &amp; bake for 30 mins. Makes 12.<\/p>\n<p style=\"text-align: left;\"><em>* The cornflour gives a softer texture than the rice, which gives a slightly crunchy outside.<\/em><\/p>\n<p style=\"text-align: left;\" align=\"center\"><strong>Variations:<\/strong><\/p>\n<ul>\n<li style=\"text-align: left;\">Double Apple: Add some chunks of peeled, chopped apple instead of, or as well as, the choc chips.<\/li>\n<li style=\"text-align: left;\">Banana Choc-chip: Replace the apple puree with 1.5 cups mashed bananas (about 3 med).
