{"id":1129,"date":"2006-05-15T17:12:21","date_gmt":"2006-05-15T05:12:21","guid":{"rendered":"http:\/\/www.frot.co.nz\/design\/recipes\/?p=1129"},"modified":"2021-05-18T09:43:04","modified_gmt":"2021-05-17T21:43:04","slug":"gluten-free-carrot-cake-muffins","status":"publish","type":"post","link":"https:\/\/www.frot.co.nz\/design\/recipes\/gluten-free-carrot-cake-muffins\/","title":{"rendered":"Gluten-free Carrot cake muffins"},"content":{"rendered":"<p>Mix together in a big bowl:<\/p>\n<ul>\n<li>1 cup ground almonds, or ground up crispy almonds or macadamias<\/li>\n<li>\u00be cup coconut flour<\/li>\n<li>\u00bc cup arrowroot (or can use other white GF flours like rice, potato or tapioca)<\/li>\n<li>1 tsp cinnamon<\/li>\n<li>1 tsp mixed spice<\/li>\n<\/ul>\n<p>Beat together in a blender or food processor:<\/p>\n<ul>\n<li>3 eggs<\/li>\n<li>4oz melted <a href=\"http:\/\/www.naturefoods.co.nz\/nutritional-oils\/coconut-oils\">coconut oil<\/a> (or palm oil, or butter)<\/li>\n<li>1 \u00bd tsp baking soda<\/li>\n<li>1 tsp vanilla essence<\/li>\n<li>4 Tbs rapadura, muscavado or shakkar (or other natural sweetener of your choice)<\/li>\n<li>Pinch fine sea salt<\/li>\n<\/ul>\n<p>Pour into the big bowl along with:<\/p>\n<ul>\n<li>2 cups grated carrots (approx 2 medium)<\/li>\n<li>\u00bd cup of sultanas or raisins (optional \u2013 if you add these, you might not even need the sweetener)<\/li>\n<\/ul>\n<p>Mix it all up. It should be a quite thick batter. Add some more ground almonds or arrowroot if needed.
