It\u2019s not ketogenic or very low carb, but it\u2019s much lower than typical breads.<\/p>\n<p><a href=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/09\/pumpkin-cashew-bread.jpg\"><img loading=\"lazy\" class=\"aligncenter size-full wp-image-1717\" src=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/09\/pumpkin-cashew-bread.jpg\" alt=\"\" width=\"550\" height=\"322\" srcset=\"https:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/09\/pumpkin-cashew-bread.jpg 550w, https:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/09\/pumpkin-cashew-bread-300x176.jpg 300w\" sizes=\"(max-width: 550px) 100vw, 550px\" \/><\/a><\/p>\n<p>You can dress it up or down, make it savoury or sweet. It goes well with soup to make a meal more substantial. For a recent choir trip, I made it into muffins and filled them with cottage cheese. Avocado would also have been nice. Or have it for breakfast with mashed banana on top.<\/p>\n<p>If you want a lighter bread, there are more complicated cashew bread recipes out there that involve separating the eggs, and beating the egg whites till fluffy, but this way is a lot quicker.<\/p>\n<ul>\n<li>6 large eggs &#8211; preferably free range (pastured)<\/li>\n<li>1 tsp celtic sea salt<\/li>\n<li>500gm raw unsalted cashews<\/li>\n<li>1.5 tsp baking soda, sifted<\/li>\n<li>2 cups cooked, mashed pumpkin<\/li>\n<li>2 Tbs apple cider vinegar<\/li>\n<\/ul>\n<p>Turn on the oven to 150\u00baC (300\u00baF) and line a loaf tin with baking paper.<\/p>\n<p>Put the cashews into the food processor and blitz till the pieces are small (about like a pin head).<\/p>\n<p>Add the eggs one or two at a time, beating till they are well mixed in. Scrape down the sides a couple of times as you go.<\/p>\n<p>Add the yoghurt, kefir or mashed pumpkin and beat till thick and creamy.<\/p>\n<p>Add in the salt and baking soda and beat again.<\/p>\n<p>Take out the food processor blade, and pour mixture into the lined loaf tin (making sure to hold the paper in place at the sides to stop it falling down under the mixture as you pour).<\/p>\n<p>Bake for 60 to 80 minutes at 150\u00baC (300\u00baF), or until a skewer comes out clean.<\/p>\n<p><a href=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/09\/banana.jpg\"><img loading=\"lazy\" class=\"aligncenter size-full wp-image-1718\" src=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/09\/banana.jpg\" alt=\"\" width=\"640\" height=\"426\" srcset=\"https:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/09\/banana.jpg 640w, https:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/09\/banana-300x200.jpg 300w, https:\/\/www.frot.co.nz\/design\/recipes\/files\/2016\/09\/banana-272x182.jpg 272w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><\/a><\/p>\n<p>I haven&#8217;t tried all of these variations, as I really like the base recipe, but I think they\u2019d all be great.
