I&#8217;m currently eating keto, so had a different focus this time. But by tweaking one or two ingredients, you can adapt this to be gluten free, dairy free, <a href=\"http:\/\/www.frot.co.nz\/design\/gapsnz\/\" target=\"_blank\" rel=\"noopener\">GAPS<\/a>, Paleo, keto, or pretty much whichever variant of whole food diet you favour. Not <a href=\"http:\/\/www.frot.co.nz\/design\/recipes\/autoimmune-paleo-aip-protocol\/\" target=\"_blank\" rel=\"noopener\">AIP<\/a> though &#8211; because without the spice, it wouldn&#8217;t be gingerbread!<\/p>\n<p>I made two batches &#8211; the first one was cut into Christmas shapes. Then a few days later, I made an easier batch, just cut up.<\/p>\n<h2 style=\"text-align: left;\">Ingredients<\/h2>\n<p style=\"text-align: left;\">\u2022 2.5 cups (280gm) almond flour<br \/>\n\u2022 \u00bc tsp sea salt<br \/>\n\u2022 \u00bd tsp baking soda<br \/>\n\u2022 1 tsp cinnamon<br \/>\n\u2022 2 tsp ginger powder<br \/>\n\u2022 1\/8 tsp ground cloves<br \/>\n\u2022 \u00bd cup sweetener of choice (note 1)<br \/>\n\u2022 1 egg<br \/>\n\u2022 \u00bc cup \/ 2 oz \/ 55g butter, melted (note 2)<br \/>\n\u2022 1 tsp vanilla extract (note 3)<\/p>\n<p>Note 1 &#8211;\u00a0 I used lakanto (a Monkfruit\/ erythritol blend) to make it keto, but use whatever works for your diet plan. For GAPS, use honey or even mashed date might work. For Paleo, dehydrated cane juice, or maple syrup.<\/p>\n<p>Note 2 &#8211; if you need to be dairy free, coconut oil will work too.<\/p>\n<p>Note 3 &#8211; I didn\u2019t have any, so used \u00bd tsp vanilla powder instead.<\/p>\n<h2>Process<\/h2>\n<p style=\"text-align: left;\">In a large bowl, combine all the dry ingredients. In a smaller bowl, mix together the wet ingredients. Stir wet ingredients into dry, until it all clumps together. If it doesn\u2019t quite bind together add a tiny bit of water, a drop at a time, till it does. It should look roughly like this.<\/p>\n<p><a href=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2018\/12\/gingerbread1.jpg\"><img loading=\"lazy\" class=\"aligncenter wp-image-1795 size-full\" src=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2018\/12\/gingerbread1.jpg\" alt=\"\" width=\"550\" height=\"518\" srcset=\"https:\/\/www.frot.co.nz\/design\/recipes\/files\/2018\/12\/gingerbread1.jpg 550w, https:\/\/www.frot.co.nz\/design\/recipes\/files\/2018\/12\/gingerbread1-300x283.jpg 300w\" sizes=\"(max-width: 550px) 100vw, 550px\" \/><\/a><\/p>\n<h2 style=\"text-align: left;\">Batch 1 &#8211; Christmas<\/h2>\n<p style=\"text-align: left;\">Shape into a rough log, wrap in baking paper and chill for 1-2 hours.<\/p>\n<p><a href=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2018\/12\/gingerbread2.jpg\"><img loading=\"lazy\" class=\"aligncenter wp-image-1796 size-full\" src=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2018\/12\/gingerbread2.jpg\" alt=\"\" width=\"600\" height=\"411\" srcset=\"https:\/\/www.frot.co.nz\/design\/recipes\/files\/2018\/12\/gingerbread2.jpg 600w, https:\/\/www.frot.co.nz\/design\/recipes\/files\/2018\/12\/gingerbread2-300x206.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/a><\/p>\n<p style=\"text-align: left;\">Roll out, between two pieces of baking paper, to about \u00bc inch \/ \u00bd cm thick. Then use your cookie cutter to cut out shapes. You will need to be very careful as the dough doesn\u2019t hold together well, being without gluten. Use a spatula to carefully lift your shapes off the baking paper and onto your lined oven tray.<\/p>\n<p style=\"text-align: left;\">Then gather up the left over bits, reshape into a new ball, and roll out again. I rolled out about 3 times, then got bored. So what was left got made into balls and flattened. These weren\u2019t at all pretty, so no photos of those! But here\u2019s what one of the trays looked like before baking. I used a few sugar free chocolate bits to decorate some, and some cut up dried strawberries on others.<\/p>\n<p><center><a href=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2018\/12\/gingerbread3.jpg\"><img loading=\"lazy\" class=\"aligncenter wp-image-1797 size-full\" src=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2018\/12\/gingerbread3.jpg\" alt=\"\" width=\"650\" height=\"407\" srcset=\"https:\/\/www.frot.co.nz\/design\/recipes\/files\/2018\/12\/gingerbread3.jpg 650w, https:\/\/www.frot.co.nz\/design\/recipes\/files\/2018\/12\/gingerbread3-300x188.jpg 300w, https:\/\/www.frot.co.nz\/design\/recipes\/files\/2018\/12\/gingerbread3-400x250.jpg 400w\" sizes=\"(max-width: 650px) 100vw, 650px\" \/><\/a><\/center><\/p>\n<p style=\"text-align: left;\">Bake for 10 to 12 mins at 350F \/ 175C watching carefully to make sure they don&#8217;t burn.<\/p>\n<p style=\"text-align: left;\">Don\u2019t try and move them off the tray till they\u2019re quite cool, by which time they will be a bit more sturdy. Here\u2019s some of the cooked ones.<\/p>\n<p><center><a href=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2018\/12\/gingerbread4.jpg\"><img loading=\"lazy\" class=\"aligncenter wp-image-1798 size-full\" src=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2018\/12\/gingerbread4.jpg\" alt=\"\" width=\"650\" height=\"441\" srcset=\"https:\/\/www.frot.co.nz\/design\/recipes\/files\/2018\/12\/gingerbread4.jpg 650w, https:\/\/www.frot.co.nz\/design\/recipes\/files\/2018\/12\/gingerbread4-300x204.jpg 300w\" sizes=\"(max-width: 650px) 100vw, 650px\" \/><\/a><\/center><\/p>\n<p style=\"text-align: left;\">For a keto dessert, I\u2019d probably serve them with some whipped or clotted cream.<\/p>\n<p style=\"text-align: left;\">If you\u2019re not as low carb as that, feel free to decorate with whatever you fancy.<\/p>\n<h2 style=\"text-align: left;\">Batch 2 &#8211; quick &amp; easy version<\/h2>\n<p style=\"text-align: left;\">From my first batch, the bits I like best were the thicker lumps that I threw together from the leftovers that I couldn\u2019t be bothered rolling out again. So I decided to make another batch, and just roll it into a log, then slice it.<\/p>\n<p style=\"text-align: left;\">This time when I rolled up in baking paper, I was a bit more careful about getting a nicely shaped log, that could be sliced up.<\/p>\n<p><a href=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2018\/12\/gingerbread-sliced.jpg\"><img loading=\"lazy\" class=\"aligncenter wp-image-1800 size-full\" src=\"http:\/\/www.frot.co.nz\/design\/recipes\/files\/2018\/12\/gingerbread-sliced.jpg\" alt=\"\" width=\"650\" height=\"336\" srcset=\"https:\/\/www.frot.co.nz\/design\/recipes\/files\/2018\/12\/gingerbread-sliced.jpg 650w, https:\/\/www.frot.co.nz\/design\/recipes\/files\/2018\/12\/gingerbread-sliced-300x155.jpg 300w\" sizes=\"(max-width: 650px) 100vw, 650px\" \/><\/a><\/p>\n<p style=\"text-align: left;\">After chilling for a couple of hours, I sliced it up, and laid the pieces out on a tray. I decided they were a bit big and cut most of them in half.
