Cheesy Oat loaf
- 2 cups rolled oats
- 2 cups kefir, or yoghurt that has been slightly thinned
- ¾ cup sunflower seeds
- 2 eggs, beaten
- 2 Tbs tamari
- 1 cup tasty cheese, grated
- 1 onion, finely chopped
- 1 tsp dried herbs or 1 Tbs chopped fresh herbs of your choice
8 hours before making, mix the oats and yoghurt together and leave covered in a warm place. Set the sunflower seeds to soak in some filtered water.
Beat the eggs and tamari together, and mix with the oats. Drain the sunflower seeds and stir in. Mix in the other ingredients. Put into a greased ring or loaf tin. Bake at 300F or 150C for one hour.
Serve with a salad or cooked vegetables, and a sauce of your choice. The loaf itself has a very mild flavour, so a spicy tomato sauce is nice, but other spicy sauces would also work.
Variation 1:
this is quite a dense loaf. If you prefer it lighter, add some arrowroot in at the end.

add other vegetables for variety and colour eg chopped red pepper, grated carrot
