Egg free Apple Cinnamon muffins
This was my first attempt at making an egg free muffin with apple puree as the binder. I made 6 medium sized muffins, but they came out quite gluggy. It would cook up better as mini muffins or as a flat bread. The cooking time would need to be adjusted.
- 1 ½ cups apple puree
- 4 Tbs (2 oz) melted ghee, butter or coconut oil
- 1 Tbs softened honey or unrefined sugar
- ½ cup ground almonds (or other nut flour)
- ½ cup coconut flour, sifted
- 1 tsp baking soda
- 1 tsp cinnamon
Beat the apple puree, oil and sweetener together with a whisk or wooden spoon.
Put ground almonds into a bowl, sift in the other dry ingredients and mix well. Add the apple mix and combine. If needed, add extra ground almonds till mixture is quite thick.
Grease 6 sections of a muffin tray extremely well or line with pattie pans or baking paper. Fill. Bake for about 50 minutes at 175C (350F).
