Nut Free Apple and Chocolate Muffins
Many of the gluten free recipes on this site use nut or coconut flours. This one is for those who can’t have grains, nuts or coconut. It has GF white flours, so isn’t completely whole foods, and is quite high carb, so have with plenty of butter.
Preheat oven to 150C/300F.
Beat together:
- 2 eggs
- ½ cup coconut oil or butter
- ½ cup unrefined sugar
- ½ cup apple puree
Thoroughly mix together:
- 1 cup white rice flour or cornflour *
- 1 cup arrowroot (or potato starch)
- 1 tsp pectin, xantham gum or guar gum
- 2 tsp GF baking powder (or 1/2 tsp baking soda, plus 1 tsp cream of tartar)
- 4 Tbs cocoa
- ¼ – ½ cup dark choc chips (opt)
Carefully fold the wet and dry ingredients together. Line a 12 muffin tray with pattie pans. Spoon into pans & bake for 30 mins. Makes 12.
* The cornflour gives a softer texture than the rice, which gives a slightly crunchy outside.
Variations:
- Double Apple: Add some chunks of peeled, chopped apple instead of, or as well as, the choc chips.
- Banana Choc-chip: Replace the apple puree with 1.5 cups mashed bananas (about 3 med). Replace the cocoa with a bit of extra flour.
- Fruit Muffins: Add 1 cup of any desired dried fruits or berries to the mixture
