Chocolate “crackles”

Remember the chocolate rice bubbles “crackles” that used to be popular at children’s birthday parties? If you use a mild flavoured nut such as almonds or macadamias, these taste very similar.

  • 225gms (8 oz) coconut oil
  • 4 Tbs honey
  • 4 Tbs cocoa
  • 1 cup dessicated coconut
  • 3 cups crispy nuts, roughly chopped in a food processor
  • Optional: ½ cup sultanas or raisins

Melt the coconut oil and honey over a very low heat. Meanwhile, chop up the nuts and mix together with the coconut and cocoa. Mix in the melted coconut oil & honey and mix well. Spoon into patty pans and put in the fridge till they set. Or pour onto a baking tray, and break into chunks once set.

Once you’ve tried the previous recipes a couple of times, you’ll probably want to experiment with developing your own favourites. Combine items from these 4 groups:

– Ground flaxseed

– Sesame seeds

– Coconut

– Stevia

– Glycerol

– Raw honey / maple syrup

Cocoa

– Bee pollen

– Essences or extracts: eg vanilla, orange, peppermint

– Cinnamon or ginger

– Chopped dried fruit

Coconut oil

– Coconut cream

– Tahini or nut butter (but not as good a fat balance)

– A little water

– Fine coconut

– Sesame seeds

Cocoa powder

– Melted sugar free chocolate (for a special occasion)
