Flaxseed bars

This recipe uses whole food sweeteners. If you are healthy with no weight problems, you can use small amounts of natural sweeteners occasionally. Choose from raw honey, maple syrup, and unrefined sugars such as rapadura, shakkar or the unrefined (dark) Billington’s sugars. If you have health problems, it’s best to avoid sweeteners altogether and you might like to try this recipe. For the occasional sweet treat, though, the combination of stevia and glycerol is fairly safe.

Mix together in a food processor:

  • 3 oz (75gm) ground flaxseed
  • 3 oz (75gm) ground crispy hazelnuts, walnuts or almonds
  • a tiny pinch stevia extract (it’s very concentrated)

Add and whizz again:

  • about 2-3 Tbs softened coconut oil (enough to moisten and bind all ingredients)
  • 1 ½ Tbs glycerol (or 1 Tbs honey, rapadura or maple syrup, if your carbs are not limited)

Choice of optional extras eg:

  • 1 ½ oz sunflowers
  • 1 Tbs cocoa
  • 1 tsp ginger or cinnamon
  • 1 tsp vanilla essence
  • sprinkling of bee pollen

Mix together & shape into small bars or balls. Roll each in coconut and refrigerate. (Or if you’re in a hurry, just press into a container and cut into bars once it’s set.)
